Bread beats stress

Instead of buying bread filled with preservatives, why not make a loaf to beat the study blues?

Kneading is a great outlet for stress, and nothing quite says “relax” like the homey aromatic sent of a fresh-baked loaf.

It is best to try out this recipe on a weekend, or when you expect to be at home for most of the day. Since the dough requires an hour and a half to rise, it can be a time-consuming activity.

Bread baking is a fun and rewarding introduction to the exciting world of homemade treats.

Easy Bread

750 ml (3 cups) flour
7 ml (1.5 teaspoons) instant yeast
6 ml (1 1/4 teaspoons) salt
5 ml (1 teaspoon) sugar
14 ml (1 tablespoon) oil
300 ml (1 2/3 cups) lukewarm water

Mix the dry ingredients together in a bowl. Make a well in the center, add the oil and stir. Gradually add as much water as needed until it forms a soft dough.

Knead for eight minutes, or until the dough is smooth and can be stretched. Try folding and pressing down on it.

Place in an oiled bowl, cover with a tea towel, and let rise for an hour, or until doubled in size.

Oil a loaf pan.

Punch down the dough after it has risen, and form it into a loaf shape. Place loaf into loaf pan. Cover with a tea towel, and let rise for 30 minutes.

Cut a slash down the middle of the loaf, and dust with flour. Bake in a 225 C (425 F) oven for 20 minutes, then reduce the temperature to 220 C (400 F) and bake for another 20 minutes. The bread is ready if it sounds hollow when tapped.
