Three ways to paradise
There are three different ways to make these cookies: delicious, mouth-watering and yummy. Why not try all three?
This is a famous family recipe. My mom calls them three-way oatmeal cookies, because the recipe includes three main poisons to pick from: raisins, chocolate or half and half. But don’t fret about the calories. With all the plant-based nutrients in our diets, these animal-friendly cookies provide the perfect outlet for vegan extravagance.
Three-way oatmeal cookies
250 ml (1 cup) vegan margarine
250 ml (1 cup) brown sugar
egg replacer for one egg
10 ml (2 tsp) vanilla
375 ml (1 1/2 cups) flour
2.5 ml (1/2 tsp) baking soda
2.5 ml (1/2 tsp) salt
2.5 ml (1/2 tsp) cinnamon
375 ml (1 1/2 cups) oats
250 ml (1 cup) raisins or chocolate chips
Cream margarine and brown sugar. Beat in the egg replacer and vanilla. In a separate bowl, combine the flour, baking soda, salt and cinnamon, and add to liquid mixture. Stir in the oats. Stir in the raisins or chocolate chips, or half a cup of both.
Bake at 350 C for 10 minutes, and geat ready to have these cookies disappear in no time at all.
